Easy Chickpea Tikka Masala | The Conscientious Eater

- 1 onion chopped
- 1/2 cup full-fat coconut milk
- 1 tablespoon + 2 teaspoons garam masala
- 14 oz. can crushed tomatoes
- 1 cup (8 oz.) tomato sauce
- 14 oz. cans chickpeas drained and rinsed
- 1/2-1 teaspoon salt or to taste
- juice of 1/2 lemon + more to taste
- Large handful of cilantro minced + more for garnish
- 3 cloves garlic minced
1. In a large skillet over medium heat, sauté the onion and garlic in a little water or oil until soft.
2. Add in the garam masala and stir well, cooking 1-2 more minutes or until the garam masala is fragrant and the onions and garlic are coated with the spices.
3. Stir in the tomato sauce, crushed tomatoes, chickpeas and coconut milk.
4. Bring the mixture to a boil and then reduce the temperature to a simmer. Allow the sauce to simmer until thickened and heated through, about 10 minutes.
5. Squeeze in the lemon juice and stir in the cilantro. Taste and adjust seasonings as needed.
6. Serve over rice with more cilantro and fresh lemon wedges.
