Pick Up Limes: Pasta with Vegan Bolognese Sauce

- 0.75 cup (101 g) green olives pits removed
- 1/3 cup (50 g) sun-dried tomato in oil drained chopped
- 2.5 cups (238 g) dry penne pasta
- 1 tsp (5 mL) olive oil
- 2 cloves garlic minced
- 1/2 cup (85 g) canned artichoke hearts drained chopped
- 1 red bell pepper chopped
- 1 tsp (1 g) dried oregano
- 1 small onion thinly sliced
- 1 cup (227 g) vegan chorizo
- 10 cherry tomatoes halved
- 1 pinch salt or more to taste
- 2 cups (528 g) pasta sauce
1. Cook the pasta according to package directions, and drain when al dente.
2. In a large pan on high heat, add the oil, onion, and garlic and cook for 2 minutes.
3. Add the vegan chorizo, bell pepper, olives, artichokes, and sun-dried tomato and cook for another 2 minutes.
4. Finally, add the pasta sauce, oregano, cherry tomatoes, salt, and pepper. When hot and bubbling, remove from heat.
5. Top the drained pasta with chorizo pasta sauce, garnish, and enjoy!
Storage
Store in an airtight container in the fridge for up to 4 days.
