Pumpkin Spiced Almond Butter

- 2 cup, whole Almonds
- 0.25 cup Maple Syrups
- 0.33 cup, mashed Pumpkin, Boiled with Salt
- 1 tsp Pumpkin Pie Spice
- 1 tablespoon Olive Oil
- 0.25 tsp Table Salt
1. Preheat your oven to 350 F or 180 C
2. On a baking sheet or in a bowl, coat your almonds in maple syrup, salt, and olive oil
3. Distribute almonds evenly on a baking sheet and place on centre rack and bake for ~10 minutes or until the almonds have turned golden brown and look roasted
4. Remove almonds from the oven and place into a food processor and blend until smooth (anywhere from 5 - 15 minutes). You may need to stop the food processor and scrape the sides but don't lose hope even if it looks thick, it will get runny with patience!
5. Once you have almond butter, add your pumpkin puree and pumpkin pie spice!
6. Store in mason jars or an air tight container in the fridge. Because it contains pumpkin puree, best to consume in 7-10 days refrigerated.
